Sunday Night Supper: Balsamic Chicken

What’s better than a baked potato? A baked potato with salad and a sauteed chicken breast with balsamic reduction:

The potatoes went in a 350 degree oven for an hour and a half.

We brined the chicken breasts, then sauteed them in olive oil in the cast iron pan for 5 minutes a side. Then into the oven for 10 minutes they went.

While they were resting —

— I poured some balsamic vinegar into the cast iron pan and boiled it til it reduced to a nice syrupy consistency, scraping up the brown stuff on the bottom as I went:

Voila. Dinner.
