Saturday Night Supper: Pork Stew and Recession Sidecars

Recession Sidecars? Yes. When you’ve got a big bottle of brandy you bought for a punch, sometimes you have to use it up. Even though you’d rather have cognac. We sipped these while putting the finishing touches on our Roman Pork and Apple Stew, a revelation of a dish that we will be making again. Soon.

The great thing about winter stews is that you can do a little work in the afternoon, and then come cocktail time, you just sit back and enjoy while it bubbles on the stove.

We had seared the pork —

— and sauteed the aromatics —

— earlier in the day. I even got the sauce ready:

Then I went upstairs and watched a movie until suppertime.
