Father’s Day Dinner

Greg grills some terrific pork chops, we serve them with two great salads, and Samantha joins us at the table for the first time. Welcome, Sam!

We started the day off at the farmers market. Lots of summer goodies are in now, but spring stuff is still here. Like snap peas!

We made Mindy’s Potato and Snap Pea Salad with Garlic and Parsley-Lemon Pesto, and also a lovely Beet and Farro Salad with Carrots and Goat Cheese (of our own non-recipe), and Greg put the chops on early. We figured we’d eat everything room temperature, to make things easy.

Blueberry Smash cocktails, anyone?

Here’s our Farro Salad with Beets, Carrots, Mint, Basil and Goat Cheese. We dressed it with a lemon vinaigrette.

And Mindy’s incomparable Potato Salad with Snap Peas.
