We had a few Meyer Lemons leftover from the late spring, and they somehow survived a long stay in the produce drawer, what is affectionately known in our home as The Rotting Drawer. So, Mexico on our mind, inspired by a trip to the Frida exhibit at the New York Botanical Garden, and wanting a cocktail to toast the Triple Crown winner, American Pharoah, we made Meyer Lemon Margaritas!

Meyer Lemon Margaritas
3 ounces tequila
3 ounces Meyer Lemon juice
2 ounces Triple Sec
Wet the outside of a glass with the inside of a lemon, then roll the wet glass in salt. Let set while you make your cocktails. Combine tequila, Meyer Lemon juice and triple sec in a cocktail shaker filled with ice. Shake vigorously until combined and cold. Strain into the salted glasses. Garnish with a lemon.
Makes 2 drinks.
