The Old Cuban

A contender for Cocktail of the Summer, 2006.


3/4 cup lime juice
1/2 cup simple syrup (1:1) or 1/3 cup superfine sugar
1 1/2 cups rum
3 generous shakes Angostura bitters

Fill 6 cocktail glasses with ice and water.
In a pitcher, muddle lime juice, simple syrup and a handful of mint. Add rum and bitters and stir. Pour into a cocktail shaker filled with ice. Empty cocktail glasses. Pour a splash of champagne into each. Strain rum mixture into the shaker. Shake vigorously and strain into the 6 chilled cocktail glasses. Top with champagne and garnish with mint and a lime twist.

Yield: 6 cocktails, with a dividend or two.
