Chattanooga Cucumber

Special Cocktail No. 2 at the cabin.

1 cup cucumber water
3/4 cup lime juice
2 cups gin
1/2 cup simple syrup
Lime twist for garnish

First, make the cucumber water. Peel and seed about 6 cucumbers and put them in a food processor. Puree until slushy. Strain through a cheesecloth, pressing the solids to extract as much liquid as possible. Refrigerate for up to 2 days.

Combine cucumber water, lime juice, gin and simple syrup in a pitcher. Stir. Fill 4 cocktail glasses with ice and water to chill. Pour into a cocktail shaker filled with ice. Empty water and ice from glasses. Shake vigorously and strain into the glasses. Garnish with a lime twist.

Makes about 6 drinks.

To make a virgin version: omit the gin in the pitcher. Strain cucumber mixture 3/4 the way into a highball glass over ice. Fill with ginger ale or club soda.
