Refried Beans

Adapted from Rick Bayless.

2 to 3 slices fatty bacon
1/2 to 1 small onion, finely chopped
1 large clove garlic, peeled and minced
2 to 3 cans black beans, drained and rinsed very well
3 to 4 tablespoons crumbled Mexican queso anejo

Cook the bacon over medium-low heat until all the fat has rendered, about 15 minutes. Remove the bacon and leave 2 tablepoons of the drippings.

Turn the heat to medium and fry the onion until browned, about 8 minutes. Add the garlic and cook 1 to 2 minutes more.

Add 1/3 of the beans to the skillet and mash then with the back of wooden spoon or with a potato masher. Repeat with the second third and the last third. Season with salt.

Take them off the heat a little softer than you think they should be. They’ll thicken more.

Just before serving, put them back over the heat and stir briskly. Serve and crumble cheese over the top.

Yield: 6 to 8 servings.
