Tantris Sidecar

Audrey Saunders, the libation goddess and owner of Pegu Club, created this variation of a Sidecar when at Bemelmans Bar in the Carlyle Hotel. Its mystery ingredient Green Chartreuse is made by French monks from hundreds of herbs.

Tantris Sidecar

1 ounce Courvoisier VS Cognac

1/2 ounce Busnel Calvados (or other good quality)

1/2 ounce Cointreau

1/2 ounce freshly squeezed lemon juice

1/2 ounce simple syrup (made by dissolving 1 cup sugar in 1 cup water over low heat)

1/4 ounce pineapple juice

1/4 ounce Green Chartreuse

With the cut edge of a slice of lemon, wet the outside rim of half a cocktail glass and roll the outside in sugar. Place the glass in the freezer to chill and set the sugar. In a cocktail shaker filled with ice, combine the ingredients and shake vigorously. Garnish with a lemon twist.

Yield: 1 drink.
