Cocktail Recipe: Mojitos

This photo got a lot of comments over on Facebook, so I thought we’d better share the recipe here, too!

Yummy refreshing minty rummy drinks, after the jump.

Mojitos for 4

1 big bunch mint, tops cut off and reserved for garnish
1 to 1 1/2 cups rum
4 to 6 limes
Simple syrup (1:1)
Club soda

Pour the rum into a pitcher and throw the bottom part of the mint in it. Muddle the mint to release the oils and let it mascerate for about 10 minutes.

While you’re waiting, squeeze the limes. You should have about 1/2 cup of juice.

Fill 4 highball glasses with ice.

Into each glass, measure 2 ounces of rum, 3/4 ounce of lime juice and 1/4 to 1/2 ounce of simple syrup, depending on how sweet you like it. Fill the glasses with soda. Turn the drink once into a cocktail shaker and pour it slowly back into the glass. Add more ice if necessary. Garnish with a mint and a wedge of lime.
