Another great winner of a recipe from TheKitchn: Asparagus and Radish Salad with Mint. Marissa and Trae brought the Asparagus and Radish Salad with Mint to Easter supper, and it was a big hit. Easy, delicious, and very spring-y.
It’s so easy you barely need a recipe. Just trim, blanch and chop asparagus; slice radishes (on a mandoline if you’ve got it) and toss with rice vingear, olive oil, salt and pepper. Then add julienned mint leaves and toss again lightly. Presto.
