Who knew? We toasted a bunch of pine nuts and tossed them in the food processor with a bit of oil and a pinch of salt. Delicious! Nutty, earthy and perfect as a schmear under our kale salad. Thanks, Cooking Light!
Pine Nut Butter
1 pound pine nuts
1 tablespoon grapeseed oil
1/4 teaspoon kosher salt
Toast the pine nuts in a dry pan over medium heat until golden but not quite brown. Do not overcook!
Combine toasted pine nuts, grapeseed oil and salt in the bowl of a food processor fitted with the chopper blade. Process until smooth.
