Flank Steak
5 cloves garlic, smashed and peeled
1 1/2 tablespoons fresh rosemary
1 1/2 tablespoons fresh thyme
1 tablespoon fennel seeds
5 tablespoons olive oil
Salt and Pepper
1 (1 1/2 pound) flank steak
Prepare a grill for high heat cooking.
Put the garlic, rosemary, thyme, fennel seeds, olive oil, salt and pepper in a small food processor and pulse to a paste. Spread it all over the flank steak.
Grill the steak exactly 5 minutes per side. Take it inside and let it rest for 10 minutes. Slice it on the bias and serve.
Yield: 3 to 4 servings.
