It’s been a while since we pulled out Mindy Fox’s excllent book “A Bird in the Oven.” One favorite recipe is Roast Chicken in Porchettata, where you take the delishy flavors of sage, garlic and fennel pollen that you find in porchetta, and mix them with butter to place under the skin of a roasted chicken. Yum.
You need to put this version in your roast chicken rotation. Don’t delay.
