A snowy Saturday at the farm, so Samantha and I take to the kitchen. On the agenda, peanut butter blondies, from a sweet new cookbook called Wintersweet that focuses on the flavors of winter.
Normally I just give Sam a bowl and a spoon and let her “mix” a little flour and water.
Bt this time, I actually set her to work. She buttered the baking dish!
And enjoyed it so much that she decided to butter her sippy cup, too.
The result: good! Not my favorite recipe on the planet, but perfectly acceptable. I think I will try another recipe or two from the book, and will report back.
The recipe:
Cream 1 cup butter at room temp with 2 cups light brown sugar. Add 1/2 cup peanut butter, 2 eggs, 1 teaspoon vanilla extract & 1 teaspoon kosher salt. Sift 2 cups AP flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, mix into butter-sugar. Fold in 1 1/2 cups semisweet chips & 1/2 cup salted peanuts. Bake at 350 about 25 mins. It should jiggle in the center and will sink in the middle. Cool, cut, eat w milk.
