Sam has been begging for ice pops lately, but I’m not so keen on giving her frozen sugar on a stick. So we came up with this watermelon ice pops recipe, and then enjoyed some good-for-you ice pops after a summer supper with the girls the next evening.
Chop up about 1/4 of a watermelon, until you have about 8 cups. 
Fill the blen der with the cubes (you may have to do this in batches). Allow Sam a taste of watermelon:
Blend with lime juice and simple syrup:

Ingredients
- 8 cups cubed watermelon (about 1/4 watermelon)
- 2 tablespoons lime juice
- 1 tablespoon simple syrup (a ratio of 1:1)
Instructions
- Chop watermelon and combine in a blender with lime juice and simple syrup. Pour into ice pop molds. Freeze at least 4 hours, and preferably overnight,
