Another new ramen place has opened in Westchester, and so we paid a visit.

The pork buns were pretty good, but not outstanding. Too tough, not enough contrast in texture and flavor. But the buns themselves were light and airy.
This was the very best ramen there, the Tantanmen. It has, according to the menu, “Kishuya original seasoning soy sauce and tonkotsu (pork) broth, temomi noodles topped with nikumiso, menma bokchoy, naruto and scallion.”
This is the miso, with chicken katsuo dashi broth, topped with pork chashu, naruto and assorted vegetables.
And the Kogashi. Tonkotsu (pork) broth, topped with kogashi garlic paste, pork chashu, nikumiso, ni tamago, menma, naruto and scallion.
The dashi broth was the only one we didn’t care for — and not because we don’t like dashi, we do. We just didn’t like the way it all played together. The best ramen was the spicy pork.

All in all, a modern atmosphere.
A nice spot. If you’re in the neighborhood, great. But I like the ramen at Mokomiya better.
