I have become more than a little obsessed with the Spinach Salad at Cyndia’s.
It’s a little luncheonette in Totowa, N.J., just a few miles from my new office. And this salad fits my new low-carb diet to a T. There’s a little fat from the bacon. Protein from the egg. No-carb mushrooms. And lots of leafy greens. Plus, it’s delicious and very satisfying.
Here’s a photo from the first time I got it. I now ask for no onions.
I get this salad every time I go, which is at least once, often twice, sometimes three times a week.
Before the low-carb thing was happening, I tried lots of other dishes here, too. A few of them are below.
