Sometimes you can just throw a couple of piece of bacon in a pan and that’s that. But when you have a lot of people for breakfast and you need the room on the stove for other things — or if you’re just in the mood for some supercrispy really yummy bacon, then you should cook it in the oven. Just use a sheet pan fitted with a rack. 400 degrees for 20 minutes and you’re golden. Golden and crispy, that is.
Just spread the bacon pieces out onto the rack:
You can put them close together; they will shrink as they cook.
After about 20 minutes at 400 CAREFULLY remove the pan from the oven. There will be smoking hot liquid pork fat in the bottom of your pan.
If the bacon looks nice and crispy on both sides, great. If the bottom could use a little more crisping, then turn them over and put them back in the oven for 5 minutes or so.
Et voila:
You can blot the extra bits of fat off with paper towels:

Bacon for a Crowd
12 slices bacon
1 sheet pan fitted with a metal cooling rack
Preheat the oven to 400. Place the bacon on the rack and put the pan in the oven. Bake for 400 degrees. Check that both sides are crispy and golden. If necessary, turn bacon slices over and return pan to oven for 5 minutes. Drain on paper towels.
