You don’t have to pull the kale off the stems for this recipe, but it makes for a nicer presentation when you’re doing a fancy dinner. Bonus: It’s vegan!

Kale with Garlic and Pine Nuts and Pine Nut Butter
2 bunches kale
2 tablespoons olive oil
6 cloves garlic, smashed and roughly chopped
Salt and pepper
1/2 cup toasted pine nuts
Pine nut butter (recipe here)
Wash the kale, then rip the leaves off the stems of the kale. Leave the kale leaves slightly wet.
Combine oil, garlic and kale in a big pot. Season with salt and pepper. Cook over medium-low heat for about 40 minutes, stirring occasionally.
To serve, place a spoonful of pine nut butter on the plate and drag the spoon across it to smear underneath where you will be plating the kale. Place kale on top and garnish with toasted pine nuts.
Serves 8 to 10.
