Cedar Plank Salmon with Corn and Cucumbers

The salmon at Pura Vida Fisheries at the Hastings Farmers Market was so beautiful we couldn’t pass it up. We cooked it over a cedar plank and served it with corn and Doris’ cucumber salad, which helped cut the richness of the fish with its brightness. (It’s not on the plate because we shared a bowl of it.) Loved this dinner!
