The buttermilk really brings out the tang in this dressing. We loved it over romaine, served with corn and lobster. Lobster and tarragon are a match made in heaven. The original recipe calls for 2 anchovies, but we added 3.

Green Goddess Dressing

1/2 cup mayonnaise
1/3 cup buttermilk
1/4 cup chopped fresh chives
1/4 cup coarsely chopped flat-leaf parsley
1 tablespoon chopped fresh tarragon
1 tablespoon fresh lemon juice
2 anchovy fillets packed in oil (drained, chopped)
1 chopped garlic clove
Kosher salt and freshly ground black pepper
In a processor, purée the first 8 ingredients until smooth. Season with kosher salt and freshly ground black pepper.
