Citrus Salad with Honey Vinaigrette

A festive salad for a winter ‘s day. It takes advantage of the so-sweet Texas grapefruit we love to have around the holidays — and the blood oranges and Cara Cara oranges that are so good this time of year. It will brighten up any brunch table.

Citrus Salad with Honey Vinaigrette

2 Texas grapefruit
2 blood oranges
2 Cara Cara oranges
3 clementines
1 tablespoon chopped taragon
1 tablespoon chopped mint
Juice of 1 lime
Orange-infused olive oil
2 teaspoons honey
Salt and pepper

Use a paring knife to remove the peel and pith of all the citrus. Cut all but the clementines into rounds. Peel the clementine pieces apart. Arrange the larger citrus on a platter, alternating colors. Place the tangerines on top. Sprinkle the tarragon and mint over the citrus.

Whisk the lime juice, olive oil, honey, salt and pepper together. Drizzle over the salad.

Serves 10 to 12.
