Longtime SCF fans may remember we’ve done a couple of bo ssam dinner parties over the years. Bo Ssam, a Korean-style roast pork shoulder, is an easy but impressive dish to serve for a dinner party. You just rub it in salt and sugar and cook it for six hours. Make a couple of sauces, serve with lettuce, and you are all set. Bo Ssam recipe, right this way.

It being the Sunday before a holiday, we did just that.

Don’t tell anyone, but the roast caught on fire when I was crisping up the glaze. Burnt sugar ain’t bad, though.
