Im the article, I also talk about turkey soup. Jane Brody’s Turkey Carcass Soup is one of my favorite soups of all time.
It’s especially good after Thanksgiving, because you can use the turkey carcass from your feast. But you can make the soup with chicken, too. Either way, you’ll need a good stock recipes. Yes, of course I have one. If you can call it that. I usually throw a lot of onions, celery and carrots in a pot, cover with water and add bones. But here’s a good recipe to get you going: Homemade chicken stock. Have some of that in your freezer and you’ll never go wrong.
