Red Eye Gravy is usually made with leftover ham grease and coffee. But I rather like the way it’s made at Momofuku Ssam Bar, with mayo mixed in. I found a recipe for that in BonAppetit, where they call it “Redeye Mayonnaise.” I simply quadrupled that recipe to come up with enough for slathering on hot biscuits and topping with salty ham. I also tweaked the hot sauce. They called for sriracha. I used my favorite, Cholula.
Red Eye Gravy
2 teaspoons instant coffee powder
4 teaspoons water
1 cup mayonnaise
1 teaspoon hot sauce (I like Cholula)
Stir coffee into water until combined. Mix with mayo and hot sauce.
